I don't think fine dining is on the way out--everyone likes to feel "special" at times. What I wonder about is the tres-casual places that charge (near) fine-dining places. If customers are feeling a budget squeeze, will they continue to pay top dollar for food that is (relatively) simple to prepare, made out of ordinary-quality ingredients? Or, maybe cooking skills have degenerated to the point where even simple cooking is impressive to some....
